Here’s What You’ll Need:
1/2 cup (100g) granulated sugar
1/2 cup (120ml) egg whites
2 1/2 cups (250g) blanched almond flour
1 tsp pure almond extract or vanilla extract
Let’s Start Baking!
Pre-heat your oven to 350F. Mix the almond flour and sugar together in a bowl and set aside. In a separate bowl, whisk the egg whites until they’re foamy and white.
Now it is time to add in the almond extract (or Amaretto) and whisk for a few seconds. Add the egg-white mix to your dry ingredients. You can mix with a spatula or use your hands if you have a hard time. Combine everything into a nice, sticky dough. Once you have a sticky dough, you can roll each cookie into balls. You can do this by taking a measuring spoon or small ice cream scoop and scooping the dough into your hands and rolling them.
Now dip each ball of cookie into powdered sugar and place them on your baking sheet lined with parchment paper, then flatten each cookie gently with the back of a spoon or your fingers.
You can also roll them into a ball and then roll them into a thick short rope, make a half-moon shape, and dip them in crushed almond slices. Then add powdered sugar on top. You can also make half-moons and leave them plain as well.
Bake at 350F for approximately 20 minutes or until light golden bottoms. Set them aside to cool down and place them in a glass Tupperware. This way, your cookies will be delicious for a longer time.
